Good memory, gf. Yes, the same kind I made @ Thanksgiving, only this time I'm sticking around for a burger or a hotdog. Last time, I dropped it off and headed back home.
1 single-layer cake made with (my preference) the Bisquick "velvet crumb cake" recipe without the "crumbs." I like to use this because it's not overly sweet. Wrap in plastice wrap. Freeze.
Assemble:
1 cup brandy
1 can sliced peaches, drained
1/2 cup boysenberry or raspberry prrserves
1 batch of Jello vanilla original pudding (made from large box) well-chilled.
2 pints whipped cream (or a big tub of Cool Whip)
Remove frozen cake from freezer and slice horizontally to make two layers.
Sprinkle half the brandy over bottom layer
Spread jam over bottom layer
Place top layer over jam. Cut cake into 2-or-3 inch squares. Place squares of cake in a large jelly roll pan 1/2 inches apart.
Spoon vanilla pudding along all sides of cake squares, filling all gaps. Sprinkle remaining brandy over cake squares.
Push peach slices into pudding around each side of cake squares.
Spread whipped cream over the whole business and garnish with shaved chocolate (unless it's the Fourth of July...then you use strawberries and blueberries.....lol)
It was funny. Many people didn't know about the brandy and as we were having desert, one man turned to his girlfriend and said, "Whoa, there's a little surprise in here."
